Subcritical water extraction was a new kind of green extraction technology with high extraction efficiency, low energy consumption, wide extraction range and so forth. The technology had been wide- ly used in the extraction of polysaccharides, polyphenols and other bioactive substances. The progress re- search of subcritical water extraction and its enhancement technology in the extraction of bioactive sub- stances were reviewed, and its development in the future was also predicted in this paper.
