Microbial lipase is one of the important enzymes for industries. It is also the study hot spot in world. In this paper we reviewed the application and research recent developments of microbial lipase in food processing, synthesizing chiral chemical compound, hydrolyzing grease, refining fatty acid, tristearate structure determination and managing environment.
