农产品质量安全一直都是国内外研究的热点,食用菌是农产品中的第六大类,消费者也比较关注食用菌的质量安全问题,食用菌很容易受到重金属以及微生物的污染,而且经常会出现农药残留的现象,对食用菌质量安全进行风险评价研究可以发现食用菌易出现的质量安全问题并且提出控制措施,保证食用菌质量安全.从农产品质量安全、食用菌质量安全、农产品质量安全风险评价三个方面进行分析评述.
