制备了W/O型微乳液作为茶多酚的载体;考察了温度和pH值对微乳液区域的影响,并用黏度仪和激光粒度仪研究了空白微乳和茶多酚微乳液的微结构.结果表明,制备的微乳区域在不同温度、不同pH值下基本不变;制备的微乳液为球形结构,加入的茶多酚对微乳的粒径、分散度及流变性均无显著影响.
W/O microemulsion is prepared as the carrier of tea polyphenols. The writer investigates the effects of temperature and pH value on the microemulsion area are investigated. The microstructure of the microemulsion and tea polyphenols microemulsion is studied by viscometer and laser particle size analyzer. The results show that the microemulsion area is basically unchanged at different temperatures and pH values. The microemulsion is spherical, and the addition of tea polyphenols has no significant effect on the particle size, dispersity and rheology of the microemulsion.
