探究了温度和pH值对玉米赤霉烯酮降解酶的活性影响,明确了该酶的最适反应温度为37℃,最适反应pH值为8。Li^+及Mg^2+对该酶有激活作用,Cu^2+、Mn^2+、Co^2+、Ca^2+、Zn^2+、Ni^ 2+、Fe^3+、EDTA等对该酶有抑制作用。并通过化学修饰的方法初步考察了该酶的功能基团,结果表明该酶的活性中心与丝氨酸和赖氨酸密切相关。
The effects of temperature,pH and metal ions on degradation enzyme activity of zearalenone(ZEN) were studied. The optimum temperature and pH of the enzyme were 37℃ and 8,respectively. Ions Li^+ and Mg^2+ were activators for ZEN degradation, however,ions Cu^2+ , Mn^2+ , Co^2+ ,Ca^2+ , Zn^2+ , Ni^2+ , Fe^3+ and EDTA were strong inhibitors. The method of chemical modification was used to explore the functional groups of ZEN degradation enzyme. The results showed that the enzyme active center was closely related to serine and lysine.
