The types,content and function of anthocyanins in pigment flesh potato was reviewed. Two existing genetic models for anthocyanin pigmentation in potato were compared. The pigment flesh potato breeding progress was introduced to elucidate that pigment flesh potato are potential natural colourants and significant antioxidant sources in human nutrition.
