Various diseases are associated with the organism oxidative damage induced by free radicals in the body, moreover, antioxidants have powerful antioxidant activity and capacity of scavenging free radical, and protect the bodyg cells from attack of free radical, therefore, they have been widely used in food technology and medicine fields. Antioxidants are divided into endogenous antioxidants and exogenous antioxidants, endogenous antioxidants includes superoxide dismutase, glutathione peroxidase and catalase, exogenous antioxidants includes ascorbic acid, flavonoids and phenolic compounds. The antioxidant mechanism of the above antioxidants is reviewed in this thesis.
