以虾壳降解产物几丁寡糖含量为指标,单因素法考察温度、酶浓度、pH、时间对蜗牛酶降解虾壳的影响,确定蜗牛酶降解虾壳的大致条件.在此基础上,进一步采用正交试验法确定蜗牛酶降解虾壳的最佳工艺条件.采用TLC方法检测降解产物,结果表明:蜗牛酶降解虾壳的最佳工艺条件是温度40℃,pH 3.8,酶浓度5mg/mL,时间为4h,酶解产物主要是几丁三糖.
