研究了4种不同抑菌剂那他霉素、肿丁胺、山梨酸钾、Nisin对小麦处理后在20℃,相对湿度为75%条件下贮藏35d的过程中,芽孢杆菌、霉菌菌落总数变化趋势及与小麦品质间的相关性。结果表明:在储藏过程中4种抑菌剂处理后小麦中芽孢杆菌菌落总数随着时间延长呈下降趋势,霉菌菌落总数呈上升趋势;与对照相比肿丁胺,Nisin和山梨酸钾处理的小麦中芽孢杆菌菌落总数均下降,分别下降了1.07倍,1.11倍,1.08倍,而那他霉素处理小麦芽孢杆菌菌落总数上升了1.3倍;那他霉素,肿丁胺,山梨酸钾,Nisin处理霉菌菌落总数与对照相比分别降低了1643倍、348倍、32倍、9倍;相关性分析表明小麦脂肪酸值和总酸度值与霉菌菌落总数呈显著正相关,与芽孢杆菌菌落总数呈显著负相关,各处理沉淀值与芽孢杆菌呈显著正相关。
The effects of four antimicrobial agents, Natamycin,2 - aminobutane, potassium sorbate and Nisin, on the correlation between the change trend, total number of Bacillus, fungal colonies, and quality of wheat under the condition of 20 ℃, RH75% during the storage of 35 d were studied in this paper. The amount of fatty acids and the total acidity values were significantly positively correlated with fungal abundance and significantly negatively correlated with Bacillus abundance. The condition of the precipitation value was opposite to that of the amount of fatty acids and the total acidity values.
