实验通过红外吸收光谱法测定了4种食用植物油的吸收光谱并进行比较分析。通过实验分析、对比数据发现,不同食用植物油在4 000 cm~500 cm-1范围内的红外吸收光谱基本相同,在3 008、2 925、2 854、1 747、1 465、1 376、1 164、723 cm-1处均出现相似的吸收峰。说明不同种类的食用植物油的主要成分大致是相同的,但是各种食用植物油红外吸收光谱特征峰的相对强度又有所不同,说明它们的不饱和脂肪酸、饱和脂肪酸及甘油三酯等主成分的含量有所不同,饱和脂肪酸和甘油三酯摄入过多,会对身体产生很严重的危害,利用红外吸收光谱法可简便、快捷分析食用油植物的有害物质。
The absorption spectra of 4 edible vegetable oils are determined by infrared absorption spectroscopy and compared with the experimental results. Through the experimental analysis and comparison,the infrared absorption spectra of different edible vegetable oils in the range of 4 000 to 500 cm- 1are basically the same,and the similar absorption peak appears at all the points of 2 925,2 854,1 747,1 465,1 376,1 164,3 008 and 723 cm- 1. That means the main components of different type edible vegetable oils are the same. But the relative intensity of the infrared absorption spectra of various edible vegetable oils is different,which shows that the main components such as unsaturated fatty acids,saturated fatty acids and triglycerides are not identical. So it means that the infrared absorption spectra can be used to make a simple and quick analysis on the harmful substances in edible oil.
