用DPPH·自由基、羟基自由基、超氧阴离子自由基、烷基自由基引发的亚油酸氧化体系对没食子酰微晶纤维素酯的清除自由基活性进行了研究,并同Vc、没食子酸进行了比较,结果表明,没食子酰微晶纤维素酯对这几种自由基均有不同程度的清除作用,其对DPPH自由基清除能力略低于Vc、没食子酸;对O2^-·自由基清除能力明显高于没食子酸,在较低质量浓度略高于Vc,在较高质量浓度略低于Vc;对·OH自由基清除能力接近Vc,但低于没食子酸;对烷基自由基清除能力明显高于没食子酸,但低于Vc.质量浓度在5mg/mL以下,没食子酰微晶纤维素酯浓度对DPPH自由基、羟基自由基、超氧阴离子自由基、烷基自由基的清除率最高分别达到了82.9%、23.2%、35.7%、48.9%.
Using the DPPH · system, hydroxyl radical system , super oxide system, and oxidation system of linoleicacid induced by alkylradic, the galloyl-microcrystalline cellulose ester is studied compared with Vc and gallic acid, respectively. The experimental results show that the galloyl-microerystalline cellulose ester had different scavenging effect on these radical systems. The scavenging capability of galloyl-microcrystalline cellulose to DPPH · is slightly lower than Vc and gallic acid . To super oxide system is slightly higher than gallic acid , and in lower concentration it is higher than Vc and in higher concentration it is lower than Vc. To hydroxyl radical system significantly is closed to Vc, but is lower than gallic acid. To the oxidation system of linoleic acid induced by alkylradic is higher, but is lower than Vc. The scavenging capacity of galloyl-microcrystalline cellulose to DPPH · system, hydroxyl radical system , super oxide system, and oxidation system of linoleic acid induced by alkylradic is the highestwhen the concentration is 5 mg /mL, the capacities are 82. 9%, 23. 2%, 35.7% , 48.9% respectively.
