以自制大麦醇溶蛋白为基材,以纳米Ti O_2粒子为改性材料制备可食性膜,并对其部分理化特性进行分析。FTIR结果表明,大麦醇溶蛋白粉在1 654、1 545及1 452 cm(-1)处呈现典型的蛋白特征峰吸收。利用溶液浇铸法制备了大麦醇溶蛋白可食性膜以及大麦醇溶蛋白/纳米Ti O_2可食性膜。与大麦醇溶蛋白可食性膜相比,大麦醇溶蛋白/纳米Ti O_2可食性膜抗拉强度TS由313.91 k Pa提高至514.21 k Pa,断裂伸长率E由487%降低至221%,纳米Ti O_2粒子的加入使得膜的平均透湿率降低了19.5%,平均透CO_2率、平均透O_2率分别提高了12.8%和17.1%。
In this paper,the edible films were prepared using hordein obtained in laboratory as the main material and nano- Ti O_2 particle as the modified material,and their physical and chemical properties were studied thoroughly. FTIR results showed that the hordein powder presented typical absorption peaks of protein at 1 654,1 545 and 1 452 cm~(-1). Hordein film and hordein/nano- Ti O_2 composite film were prepared by solution- casting method.Compared with the hordein film,the tensile strength of the composite film increased to 514. 21 k Pa from 313. 91 k Pa,and the elongation reduced to 221% from 487%,respectively. The average water transmission rate of the composite film has reduced by 19. 5%; the average penetration rate of CO_2 has increased by 12. 8%; the average penetration rate of O_2 has increased by 17. 1%.
