野生樱桃李俗称野酸梅,蔷薇科李属,由于其果实口感好,且具丰富的营养和药用价值,历来就受到人们的研究重视。虽然前人对其进行了生态、栽培、果实营养成分、果汁加工等方面的开发和研究,但对其生物学成分,抗氧化功能、机理、成分分析,高附加值产品的开发等方面的研究近年来才逐步开展。基于此,文章以其果实实用特性为出发点,从维生素、氨基酸、糖类、微量元素、黄酮类含量等方面对其果肉特性进行了综述,从蛋白质、脂肪酸、纤维素等方面对其核仁特性进行了综述,从天然色素种类、含量、抗氧化功能等方面对其果皮特性进行了综述,期望为其开发利用提供更好的思路。
Myrobalan Plum (Peunus cerasifera Ehrh. ), commonly known as wild plum, Prunus, Rosaceae, an edible fruit, owing to its good fruit tastes and abundant nutritional value and medicinal value, has been paid much attentions since ancient times. Although a lot of studies have been made on its ecology, cultivation, fruit nutrients, fruit juice processing and other aspects, its biological ingre- dient, antioxidant function, mechanism,component analysis and the develoPment of high value researches have been gradually carried out in recent years. Therefore, based on this in the article its practical characteristics of fruit as the starting point, from vitamins, amino acids, sugars,trace elements and flavone content as well as other pulp properties are reviewed. On the other hand from protein, fatty acid, cellulose and other aspects of its pyrenes characteristics are reviewed in this paper. Besides the natural pigment types, content, antioxidant function and the pericarp characteristics are discussed,looking forward to better ideas of its development and utilization.
