Chitosan was hydrolyzed by non - specific enzymes into chitooligosacchrides with some interesting functional properties and physiological activities, which have attracted many researchers in chitin science in recent years. Papain is a sulfhydryl protease from the stem and fruit of Carica papaya widely. The recent developments of research at home and abroad on depolymerization of chitosan by papain were introduced in this paper.
