苯并α芘(BaP)是致癌性最强的多环芳烃,因其亲油性而容易集聚于油脂中.本试验以菜籽油为原料,研究碱炼脱酸过程中加碱量、碱炼时间、碱炼温度和超碱量对脱除菜籽油中苯并芘及脱色效果的影响.结果表明,在碱炼时间40 min、碱液浓度8 .Bé、超碱量0.2%、碱炼温度80℃的工艺条件下,菜籽油中BaP的脱除率达52%,其含量由10.1 μg,/kg降低至4.8 μg/kg,菜籽油色泽由R5、Y40降至R4、Y30.合理的碱炼脱酸条件对于兼带脱除油脂中BaP及脱色是有效的.
Benzo pyrene (BaP) is one of the most carcinogenic polycyclic aromatic hydrocarbons,which gathering in oil due to its lipophilicity.In this paper,the influences of alkali concentration,alkali refining time,alkali refining temperature and ultra-alkali amount of BaP content and color of rapeseed oil have been studied.The optimum conditions of alkali refining are:alkali refining time 40 min,the alkali concentration 8 ° Bé,ultra-alkali amount 0.2%,and alkali refining temperature 80 ℃.The BaP removal rate of rapeseed oil reached to 52%,whose content was reduced from 10.1 to 4.8 μg/kg.In addition,the R-value and the Y-value of rapeseed oil decreased from 5 and 40 to 4 and 30,respectively.In conclusion,it is effective to remove BaP and color of rapeseed oil by alkali refining properly.
