Highly unsaturated fatty acids （HUFAs） are necessary fatty acids （EFAs） fi）r organisms, which play important and multiple functions. However, studies on the effect of fat and fatty acids in the animal are much more than HUFAs, resuhing in poor understanding of HUFAs＇s effects and their mech- anism. The present paper reviews the effect and mechanism of HUFAs on the metabolism of aquatic an- imal. in which emphasis is in the metabolism of fatty acids, proteins, carbohydate and nuclear acids. The purpose is to investigate further the effect and mechanism of HUFAs on the metabolism of aquaticanimal as well as their regulating mechanism. As a resuh, HUFAs are effectively used to control the metabolism of aquatic animal, to improve growth and development, to promote healthy aquaculture and productive effectiveness, to in- crease economical and social effectiveness.
