Grating-based X-ray imaging can make use ofconventional tube sources to provide absorption, refractionand scattering contrast images from a single set of projectionimages efficiently. In this paper, a fresh cherrytomato and a dried umeboshi are imaged by using X-rayTalbot-Lau interferometer. The seed distribution in thescattering image of the cherry tomato, and the wrinkles ofepicarp in the refraction image of the umeboshi, are showndistinctly. The refraction and scattering images providemore information on subtle features than the absorptionimage. Also, the contrast-to-noise ratio values show distinguishingcapacity of the three kinds of imaging techniques.The results confirm that grating-based X-rayimaging is of great potential in non-destructive fruittesting.
