Amino acid and fatty acid levels were determined and compared in muscular tissue of mud clam Tegillarca granosa Linnaeus collected from Yang-jiang, Guangdong Province and Yue-qing, Zhejiang Province. Eighteen kinds of amino acids and fatty acids were found in the muscle, total contents being 42.76 mg/g and 25.86 mg/g, respectively. The total contents of essential amino acids and flavor amino acids reached 15.47 mg/g and 20.78 mg/g, about 36.17% and 50.42% of the total amino acids. There were total monounsaturated fatty acid （MUFA） and polyunsaturated fatty acid （PUFA） contents of 7.29 mg/g, about 58.60% of the total content of fatty acids. There were more amino acids and fatty acids in the clam sampled from the Yang-jiang than those in the clam collected from Yue-qing which had a better structure of nutrition, and higher prominent nutritional values.
