Anthocyanins are natural water-soluble pigments, which impart fresh color to fruits, vegetables and plants. Major sources of anthocyanins are blueberries, cherries, raspberries, strawberries, purple grapes and red wine. Anthocyanins which belongs to the flavonoids class possess many biological activities including antioxidant, anti-inflammation, anti-aging, anti-cardiovascular,anti-cancer and so on. Anthocyanins play a key role in human health. Anthocyanins have been reported to exert positive effects in the treatment of various diseases and are prescribed as medicines. Inhibiting the occurrence of tumor by multi-mechanisms such as antiproliferative activities, inducing apoptosis and so on; Working as an antioxidant by scavenging free radicals et al; decreasing risk of inflammation through suppressing expression of various inflammatory factor. This series of biological activities bring infinite hope to people when they against all kinds of diseases. In this review, characteristics, extraction and biological activities of anthocyanins were summarized, especially biological activities.
