本试验以4种叶菜类蔬菜为试材,通过低温处理来研究在不同低温下4种叶菜类蔬菜的相对电导率、半致死温度、可溶性蛋白等7个生理指标的变化。结果表明:4种叶菜类蔬菜的相对电导率随温度的降低而逐渐升高,半致死温度的排序是:一点红苋菜〉紫叶生菜〉大叶木耳菜〉紫冠1号小白菜。而可溶性蛋白、MDA含量以及保护酶系统变化规律不明显。
The experiment takes the 4 kinds of leafy vegetables as test materials. Through the low temperature treatment to research the 4 kinds of leafy vegetables" relative conductivity, semi - lethal temperature and soluble protein content etc. the 7 physiological indexes" variation in different temperatures. The results showed that: the 4 kinds of leafy vegetables relative conductivity will gradually increase with the decrease of temperature ; Semi - lethal temperature sorting is: Emilia sonchifolia amaranth 〉 purple leaves lettuce 〉 Big - leaf Malabar Spinach 〉 Purple crown 1 pakchoi cabbage. But the soluble protein content, MDA content and protective enzyme systems'variation are not obvious.
