对不同物流流程中荔枝的品质变化展开试验分析,获得了常温物流、不完整冷链物流和完整冷链物流条件下,荔枝果皮褐变、果皮色差、果皮花色素苷、果肉可溶性固形物含量、果肉pH值、果实失重率等参数的变化规律.研究表明:温度波动将对荔枝品质造成破坏,此外,表皮褐变检测法较为适合在物流现场推广使用.
Experiments are done on the quality of litchi in different conditions. The variation laws of litchi parameters are gained, such as the browning, color shading, anthocyanin of pericarp, pH value and soluble solids of pulp, lose ratio, etc. It shows that litchi' s quality will be hurt seriously by the temperature fluctuation. The test method of pericarp browning suits the promoted use in litchi' s logistics.
