为了研究恩施碎米荠营养成分水平,采用我国现行标准对碎米荠的茎、叶子、种子、种荚中蛋白质含量、氨基酸种类及其氨基酸含量、硒含量以进行测定。结果表明：叶子蛋白质含量高达17.8 g/100g、硒含量高达388.38mg/kg,氨基酸种类齐全,含量丰富。恩施碎米荠具备人体所必需的营养元素,具有极高的应用与开发价值。

Purpuse：Toanalyze the nutrient levels of Cardamine enshiensis. Method：The content of protein determination,types and content of amino acid,as well as the content of selenium and cadmium in stems,leaves,and seeds of Cardamine enshiensis were detected by National Standard. Result：The content of protein,amino acids and Se in leaves of Cardamine enshiensiswas 17.8 g / 100 g,16.30 g / 100 g,388.38 mg / kg respectively. Cardamine enshiensiswas rich in necessary elements for human,thereby might be promising for further exploitation as a new plant resources.
