淀粉和无机盐的共混体系在食品、造纸、皮革、纺织工业和医学上都具有理论和实际意义。本文简要介绍了国际学术界对淀粉和无机盐相互作用的研究,以及这些相互作用对淀粉糊化及其流变性能的影响。
Blends of starch and inorganic salts owns theoritical and practical significance in paper making, leather, textile, food industries and medicine. This paper briefly introduced international investigation on interactions between starches and inorgnic salts, and discussed the effects on gelatinization and rheological properties of starches.
