本试验对野生虎斑乌贼5种组织(肌肉、肝脏、卵巢、缠卵腺、副缠卵腺)的营养成分进行分析,旨在对其营养价值进行评估。随机选取雌、雄野生虎斑乌贼[雌性个体平均体长(31.37±0.32) cm,平均体重(2173.33±141.10) g;雄性个体平均体长(30.97±0.74) cm,平均体重(2476.33±117.54) g]各10尾,采用生化分析手段对其肌肉、肝脏、卵巢、缠卵腺、副缠卵腺中水分、粗灰分、粗蛋白质、粗脂肪含量以及氨基酸、脂肪酸组成与含量进行测定与分析,每个组织测定3个平行。结果表明:野生虎斑乌贼5种组织中,水分含量为60.12%-78.33%,各组织间差异显著(P〈0.05);粗蛋白质含量为31.47%-77.93%,表现为肌肉(77.93%)〉卵巢(62.39%)〉副缠卵腺(58.62%)〉缠卵腺(57.64%)〉肝脏(31.47%),各组织间差异显著(P〈0.05);粗灰分含量为1.26%-3.18%,除肌肉与缠卵腺无显著差异( P〉0.05)外,其他组织间差异显著( P〈0.05),以副缠卵腺最高,肝脏最低;粗脂肪含量为2.46%-12.82%,表现为肝脏(12.82%)〉缠卵腺(4.80%)〉副缠卵腺(3.42%)〉肌肉(3.14%)〉卵巢(2.46%),除肌肉与副缠卵腺无显著差异(P〉0.05)外,其他组织间差异显著( P〈0.05)。野生虎斑乌贼5种组织均含有17种氨基酸,其中总氨基酸( TAA)含量为27.68%-77.87%,必需氨基酸( EAA)含量为13.60%-31.80%;共检出26种脂肪酸,包括12种饱和脂肪酸( SFA),7种单不饱和脂肪酸( MUFA)和7种多不饱和脂肪酸(PUFA),其中PUFA含量为27.48%-54.15%,以肝脏最低,显著低于其他组织(P〈0.05),具体为缠卵腺(54.15%)〉肌肉(47.74%)〉卵巢(45.50%)〉副缠卵腺(41.49%)〉肝脏(27.48%);C20∶5n-3( EPA)含量为6.72%-16.03%,C22∶6n-3( DHA)含量为12.79%-32.20%。由此得出,野生虎斑乌贼是一种高蛋白质、低脂肪、氨基酸含量高且种类齐全、PUFA含量丰富(尤
In order to evaluate the nutritive value of wild Sepia pharaonis, the nutritional components of differ-ent tissues ( muscle, liver, ovary, nidamental gland and accessory nidamental gland) were determined. Ten fe-male and 10 male wild Sepia pharaonis were randomly selected [ female individual: average body length (31.37±0.32) cm, average body weight (2 173.33±141.10) g; male individual: average body length (30.97±0.74) cm, average body weight (2 476.33±117.54) g]. The contents of moisture, ash, crude pro-tein, crude fat, and the composition and contents of amino acids and fatty acids in muscle, liver, ovary, nida-mental gland and accessory nidamental gland were determined by biochemical analysis methods. Each organiza-tion was measured with 3 replications. The results showed that moisture and crude protein contents were signifi-cantly different among different tissues (P〈0.05). The moisture content in 5 tissues of wild Sepia pharaonis was 60.12% to 78.33%. The crude protein content in 5 tissues of wild Sepia pharaonis was 31. 47% to 77.93%, with the highest value in muscle (77.93%), followed by ovary (62.39%), accessory nidamental gland (58.62%), nidamental gland (57.64%) and liver (31.47%). The ash content in 5 tissues of wild Sepia pharaonis was 1.26% to 3.18%, and there was a significant difference (P〈0.05) with exception of muscle and nidamental gland ( P〉0.05) , with the highest value in accessory nidamental gland and the lowest value in liver. The crude fat content in 5 tissues of wild Sepia pharaonis was 2.46% to 12.82%, and there was a signifi-cant difference ( P〈0.05) with exception of muscle and accessory nidamental gland ( P〉0.05) . The liver had the highest crude fat content (12.82%), followed by nidamental gland (4.80%), accessory nidamental gland (3.42%), muscle (3.14%) and ovary (2.46%). A total of 17 amino acids were identified in 5 tissues of wild Sepia pharaonis. The total amino acid content in 5 tis
