英文摘要：

Chinese sake with long history and glories is one of the oldest varieties of Chinese brewing wine. The production of new generation Chinese sake is investigated in this paper. According to the characteristics of the new generation sake fermentation,this paper designs a sake fermentation process monitoring and control system,taking LabVIEW as the development platform,combing the PLC,intelligent instruments and some related sensors and using Profibus and RS - 485 bus communication protocol. The system can woke stably and effciently and can meet the needs of sake fermentation process automatic control.
