利用微波辅助水提法研究了甘肃陇南核桃渣中蛋白质的提取工艺。在单因素试验的基础上,利用响应法优化了4个提取参数(温度、N-N、液料比、提取pH)对蛋白得率的影响。建立了核桃渣蛋白得率与N素变量的二次回归模型方程,该回归模型显著。响应面分析结果表明,最佳提取条件为:在微波功率恒定条件下温度51℃、提g15min、液料比34:1(mL/g)、pH10,可使核桃渣中蛋白质得率达到30.84%。
Microwave assisted water has been used to study the longnan in gansu province walnut protein extraction technology in slag. On the basis of single factor experiment, response method was used to optimize the four exlraction parameters (temperature, time, and solid-liquid ratio and extraction pH) effect on the protein extraction rate. Walnut dregs protein extraction rate was established and factor variables of quadratic regression model equation of the regression model. Response surface analysis, the results show that: the best condition for the microwave power under the condition of constant temperature 51 ℃, 15 min of extraction, compared to the rising of material liquid 34 : 1 (mL/g), pH 10, can make the walnut protein yield reached 34.8% in the residue.
