虾青素最早是在虾、蟹壳中发现的一种非维生素A源的类胡萝卜素,被认为是目前为止发现的抗氧化能力最强的物质。因其具有强大的生物学功能及安全、无毒副作用等特点,在食品、医药、化工和水产养殖等方面具有广泛的应用前景,近年虾青素的研究与开发一直是国内外普遍关注的热点。本文对近几年有关虾青素的生产工艺、药理活性及其应用的最新研究进展进行综述,为虾青素的进一步开发利用提供参考。
Astaxanthin is the strongest antioxidant substance at present,and it is a non-vitamin source carotenoids which was found in carapace of prawn and mitten crab at first. Astaxanthin has been widely used in food,medicine,cosmetics and aquaculture,because it has no toxic and side-effect. In order to improve development of astaxanthin industry in china,the production,pharmacological activities and utilization of astaxanthin are reviewed in this article.
