凝结特性监测是豆浆制品生产质量监控过程中的重要环节,传统的豆浆凝结特性分析方法容易对豆浆胶体产生破坏且不具有实时性。利用纹理分析法对豆浆凝结特性进行分析和计算,对豆浆凝结过程表面进行拍摄并截图,采用MATLAB对截取的图像数据进行纹理分析计算,通过对像素点的卷积运算得出图像的梯度值,最终提取需要图像特征值。试验结果表明,该方法可方便快捷的对豆浆凝结特性进行分析,价格低廉,实用性强。
Monitoring soy coagulation is a central and hard issue. Tmdiiional analytical method can not do real-tinae application on coagulate progress and destroy the gel. Use texture analysis to calculate the soy coagulation. Through CCD on the soya coagulate surface, the screenshots were gotten. Use MATLAB to analyze the texture of those screenshots. Using convolution every pixel, the main feature and gradient of the picture can be extracted. The result shows that this method doesn't destroy the coagulate progress and do real-time application. The advantage of this method is convenient, swift, with low price and oracticabilitv.
