在中国,企业滥用食品添加剂较为普遍,并引发了诸多的食品安全事件,成为公众最担心的食品安全问题之一。以河南省郑州市88家食品生产企业为例,对添加剂的使用行为进行了调查,深入研究企业食品添加剂的使用行为。结果显示,强化企业食品添加剂的使用管理已刻不容缓;企业食品添加剂使用行为与企业规模、产品类别及供应链一体化水平具有一定的相关性。

英文摘要：

In China,food additives abuse in food industry is common,causes a lot of food safety incidents,and becomes one of the most concerned issues of the public.In this paper,we took a survey about the use of food additive in 88 food processing enterprises of Zhengzhou,studying the using of food additives by processing enterprises profoundly.The result demonstrates that a stricter regulation of the use of food additives is essential;and the size of enterprises,the category of products and the integrated level of supply chain have some relevance with enterprises＇using of food additives.
