以舍饲、放牧两种饲养方式下的12 月龄苏尼特羊不同部位的肌肉为实验材料,取股二头肌、背最长肌、臂三头肌3 个部位,测定其屠宰后45 min和24 h的pH值,分别测定其灰分、蛋白质、脂肪、硫胺素、还原糖及矿物质含量并进行比较分析.结果表明:屠宰后45 min,舍饲的苏尼特羊肉的pH值显著高于放牧(P〈0.05),24 h后,与放牧的相比没有显著差异,舍饲苏尼特羊肉中的脂肪含量高于放牧,而放牧苏尼特羊肉中的蛋白质、灰分、硫胺素、还原糖含量高于舍饲,并且不同的矿物质之间在苏尼特羊体内吸收有-定的相关性.放牧比舍饲更有利于苏尼特羊体内蛋白质、矿物质、还原糖等营养成分的积累,从而使其羊肉的营养成分更丰富,品质更佳,具有更高的营养价值.
The objective of this study was to investigate the difference in nutritional components of Longissimus dorsi,Biceps femoris and Triceps brachii muscles from Sunit sheep subjected to two feeding methods (grazing and house-feeding).Sunite sheep were slaughtered at 12 months of age for the collection of muscle samples. The results showed that pH of thehouse-feeding group measured at 45 min postmortem was significantly higher than that of the grazing group (P 〈 0.05), andit was not significantly different from the grazing group at 24 h postmortem. Additionally, intramuscular fat content of thehouse-feeding group was higher than that of the grazing group. However, crude protein, ash, thiamine and reducing sugarcontents of the grazing group were higher than those of the house-feeding group, and the absorption of mineral elementcontents in Sunit sheep was highly correlated with different feeding methods. The accumulation of nutritional components ingrazing Sunit sheep was better than in house-fed sheep, and the meat of grazing Sunit sheep was rich in a variety of nutrientswith good quality and high nutritional value.
