文中结合作者多年来的研究成果,对大豆中主要抗原蛋白的识别技术、已识别抗原的相关性质、大豆抗原蛋白对不同种属动物的抗营养作用及其相关机制、降低大豆抗原蛋白免疫原性的主要处理方法等进行了综述,并对该领域未来的发展方向和工作重点进行了探讨和展望。
Combining with the authors' research advances for more than ten years, this article summarized the identification technology of soybean allergen proteins, the characteristics of the known allergens, anti- nutritional effects and relative mechanism of soybean allergens on different species of animals, and technological approaches to decrease soybean allergenicity. Meanwhile, it discussed and suggested the developing trend and working emphasis of future research in this area.
