大豆具有蛋白质含量丰富、氨基酸比例平衡等特点,营养价值非常高,作为一种优质的植物蛋白源,被广泛应用于猪饲料中。但是大豆中含有相当高水平的大豆抗原、大豆凝集素、蛋白酶抑制因子等抗营养因子,能使猪特别是仔猪出现过敏,小肠正常结构和功能被破坏,内源氮损失增加等一系列不良现象。危害了猪正常的生长发育和健康,给养猪生产造成了相当大的影响,限制了大豆加工产品在猪日粮中的应用。文章概述了大豆抗原、大豆凝集素、蛋白酶抑制因子这三种主要的大豆抗营养因子的含义、分类、生物学功能及对猪健康的影响,为大豆加工制品在猪日粮中的合理开发利用提供一定的参考依据。
Soybean is rich of protein and its amino acid composition is balance. The nutritional value of soybean is high and it was used widely in swine diets as a good plant protein resource. However,soybean contains a high level of antinutritional factors such as soybean antigen, soybean agglutinin, proteinase inhibitor and so on. These antinutritional factors could destroy the normal structure and function of small intestine, increase endogenous nitrogen loss of swine, which had hazard the growth, development and health of swine, and limited the use of soybean products in swine's diets. This article outlined the defination, classification and biological function of soybean antigen, soybean agglutinin and proteinase inhibitor three main soybean antinutritional factors and their effects on swine' s health. The purpose of this article is to provide a theory basis for development and utilization of the soybean products in the swine' s diets.
