Some methods of chemical modification of protein applied in industry, such as degradation, esterification, acylation, phosphorylation, glycosylation, deamidation, crosslinking copolymerization, oxidation as well as synthesis of proteinoid are introduced. Though the modification of protein is primarily utilized to food industry, it is expected that protein would be also extensively used to other industries with the increasing needs of biodegradable material and non - petroleum resource.
