介绍了目前工业应用中蛋白质功能化修饰的主要方法，包括降解、酯化、酰化、磷酸化、糖基化、脱酰胺、交联共聚、氧化、类蛋白质合成等。国内的蛋白质修饰主要集中在食品工业，但随着可降解材料和非石油资源的需求增加，蛋白质在非食品工业中的应用也将会有广阔前景。
英文摘要：
Some methods of chemical modification of protein applied in industry, such as degradation, esterification, acylation, phosphorylation, glycosylation, deamidation, crosslinking copolymerization, oxidation as well as synthesis of proteinoid are introduced. Though the modification of protein is primarily utilized to food industry, it is expected that protein would be also extensively used to other industries with the increasing needs of biodegradable material and non - petroleum resource.
