武夷岩茶不同岩区品质形成研究进展

武夷岩茶是四大乌龙茶中闽北乌龙的典型代表。由于地理环境的不同,武夷岩茶有正岩、半岩、洲茶之分。其中正岩茶香高味浓、醇而不涩,其品质优于半岩茶和洲茶。而洲茶的品质较次于半岩茶,这和其生长的环境、土壤因素有着重要关系。本文综述了武夷岩茶不同岩区风味品质差异的历史形成以及现代分析技术依据,并从气候条件和土壤条件两方面分析形成不同岩区岩茶品质差异的成因,得出武夷岩茶不同岩区风味品质差异主要是由于名岩产区独特的地质条件和优异的生态环境所生产出的茶鲜叶品质优良。并指出构建武夷山正岩茶产区自然生态模型将有助于自然生态已遭破坏的茶产区恢复生态环境,提高茶叶品质,同时也可作为茶叶设施农艺的理论依据;另一方面对于不同岩区武夷岩茶感官品质的剖面分析可能是进一步研究形成正岩茶优异品质的方向,或许能够为提高其他产区岩茶品质指明道路。

英文摘要:

Wuyi rock tea is a typical example of Minbei Oolong tea from the Top Four Oolong Tea. It is classified into Zhengyan rock tea, Banyan rock tea and Zhou rock tea according to the different geographical conditions. Zhengyan rock tea smells high aroma as well as tastes strong and mellow but not astringency. The quality of Zhengyan rock tea is better than Banyan rock tea and Zhou rock tea. While the quality of Zhou rock tea is lower than Banyan rock tea because its environment and soil is the worst. This paper presented a review on the history and foundation of modem analysis technologies in Wuyi rock tea quality from different areas. And then different quality origins were analyzed by climate conditions and soil conditions. The quality of Wuyi rock tea from Famous rock area was better than which from Dan rock area perhaps because of Danxia landform and good climate condition. Constructing natural ecological model of Wuyishan rock tea would be good for restorating destroction ecological environment and improving the quality of tea, as the theoretical basis of the tea agricultural facilities. Finally, the article pointed out quantitative descriptive analysis would be the next step to analyze different quality origins from different areas. It would help to improve the quality of tea from Dan rock areas.
