以采自喀斯特地区长江上游乌江水系六冲河的四川裂腹鱼(Sehizotborax kozlovi)为研究对象,测定其肌肉生化成分及含量。采用常规生化成分测定法测定其肌肉中蛋白质、脂肪、灰分和水分含量,并用氨基酸分析仪测定了肌肉氨基酸的组成和含量。结果显示,四川裂腹鱼肌肉中蛋白质、脂肪、灰分和水分含量分别为17.44%、3.51%、1.37%和78.04%。肌肉中18种常见氨基酸总含量(占肌肉干重)为85.64%;其中人体必需的10种氨基酸总含量为38.76%,占氨基酸总量的45.26%;必需氨基酸与非必需氨基酸含量的比值0.83;鲜味氨基酸含量为31.91%,占氨基酸总量的37.26%;必需氨基酸指数为68.61%。蛋氨酸和半胱氨酸为第一限制性氨基酸,色氨酸为第二限制性氨基酸。研究表明:四川裂腹鱼是一种蛋白含量较高,赖氨酸含量丰富的鱼类。
Nutritional components in muscle of Schizothorax kozlovi from the Six Impact River in the upper reaches of Yangtze River were analyzed and evaluated. The traditional method is used to measure its protein, fat, ash and moisture content in the muscle, and the amino acid composition and content in the muscle is determined by amino acid analyzer. The results showed that the content of moisture was 78.04%, the crude protein was 17.44%, the crude lipid was 3.51%, and the crude ash was 1.37%. The total content of 18 amino acids was 85.64%, including 38.76% of 10 essential amino acids, accounting for 45.26% of the total amino acids, and 31.91% of delicious amino acids, comprising of 37.26% in the total amino acids. The essential amino acid index (EAAI) was found to be 68.61. Methionine and Cystine was the first limited amino acids, Tryptophan was the second limited amino acids. So the Schizothorax kozlovi is a kind of fish with high content of protein and lysine.
