龙眼肉干品中活性物质的提取工艺优化及抗氧化作用研究

采用正交试验研究了影响龙眼肉干品中活性物质提取率的因素,通过DPPH法测定活性物质清除自由基的能力。试验结果表明,以龙眼肉干品(含水量13.62%)为原料,采用80℃热水、料水比1:12提取2h,龙眼多糖提取率为40.28%,总可溶性固形物提取率达73.24%;此外,龙眼肉干品提取物具有较强的抗氧化活性,其清除DPPH自由基的IC50为2.2g/L。

英文摘要:

Orthogonal test was used to study the factors affecting the extraction rate of active substances in dried longan pulp. DPPH method was adopted to test the antioxidant activities of the extracts. The results showed that the dried longan pulp (13.62% moisture content) as the material, extracted 2 hours at temperature 80℃ with ratio of dried longan pulp to water 1:12, the extraction rates of the total soluble solids and longan polysaccharide in dried longan pulp were 73.24% and 40.28%, respectively. The longan extracts had a good antioxidant effect and the IC50 of the extracts to scavenge DPPH free radicals was 2.2 g/L.
