小麦系统粉因其出粉部位不同导致不同系统粉的各项指标具有一定的差异。该文研究了面粉中阿拉伯木聚糖(AX)、β-木糖苷酶的分布规律,及其与系统粉理化、质构指标之间的相关性。AX含量和β-木糖苷酶活性在小麦胚乳中的分布都是由内到外逐渐增加的,即1B<2B<3B,1M<2M<3M。在ρ<0.01水平上,AX与灰分为极显著相关,AX与水分、拉伸阻力显著相关;β-木糖苷酶与AX、灰分均呈显著性相关。
Wheat system flour has certain difference qualities indicators in different parts. This paper studied the distribution of arabinoxylan(abbreviated AX)andβ-xylosidase in system flour,and the correlation with flour physicochemical,texture index. AX content andβ-xylosidase activity distribution in wheat endosperm is gradually increased from the inside to the outside,1B〈2B〈3B,1M〈2M〈3M. On theρ〈0.01 level,AX and ash significantly correlated,AX and water,extension resistance was positively correlated;β-xylosidase and AX,ash showed correlation.
