该实验以百色靖西市产的"台农1号"百香果为原料,通过测定其果肉中总糖含量、过氧化物酶(POD)活力、过氧化氢酶(CAT)活力及超氧化物歧化酶(SOD)活力,为企业结合生产实际对百香果进行深加工提供科学的参考依据。结果表明:"台农1号"百香果总糖含量为9.31g/100g、POD活力为11.6U·mg-1、CAT活力为37U·mg-1、SOD活力为84.4U·mg-1,丰富的营养成分可作为功能性食品的原料进行研发和利用。
This study utilized the"NO.1 Tai-nong"passion fruit which was produced by Jingxi City as raw materia,measured the sugar content,POD,CAT and SOD activities in passion fruit,for providing scientific reference basis forenterprise in deep processing passion fruit.The research resulted show that the total sugars in passion fruit was 9.31 percent,the POD was 11.6U·mg-1,the CAT was 37U·mg-1and the SOD was 84.4U·mg-1.The rich nourishment com-position could be used as raw materials in functional food for researching and utilization.
