Yam contains a variety of bioactive compounds with high nutritional and medicinal value, thus the development of food and beverage using yam have high commercial value. There are mainly four categories of yam containing soft drinks., yam beverage, compound yam beverage, fermented yam beverage and solid yam beverage. The formula, process and characteristics of these beverages were summarized according to different categories, and the future research direc- tions were also forecasted.
