This paper based on theory of desiccation for fruit and vegetable, and osmosis of cell is destroied by High Pulsed electrical Field, it analysised the effect of High Pulsed electrical Field processing the fruit and vegetable ,it conclude that the feasibility of High Pulsed electrical Field pretreatment fruit and vegetable . it main introduction is about processing theory and effect and factor of high pulse electrical field , and it applied prospect.
