The article reviewed the application of oat β- glucan on food industry. The thesis mainly introduced the structure and functional propertiesof oat β-glucan.The application of oat β- glucan used as fat mimetics, used in baking foods, meat products and dairy prouducts were expatiated. We prospected the application foreground of oat β- glucan.
