采用等度反相高效液相色谱-蒸发光散射检测器(RP-HPLC-ELSD)法,在酒模拟体系中,对乙醛-儿茶素缩合反应进行动力学研究。结果表明:在实验条件下,该反应为一级反应,温度对反应速率影响显著,二者关系符合Arrhenius方程,该反应的活化能为36.16kJ/mol。
The kinetics of(+)-catechin-acetaldehyde condensation reaction in a wine simulation model was invesitgated by RP-HPLC-ELSD analysis in this study.The results demonstrated that the reaction followed a first-order kinetic law under the experimental conditions.Temperature had a significant influence on the reaction rate.The relationship between temperature and reaction rate obeyed the Arrhenius equation and the activation energy of the condensation reaction was 36.16 kJ/mol.
