综述了中国传统酿造白酒中的各种对人体健康有益的化学成分研究进展,这些化学成分包括酚类、酸类、酯类、萜烯类、吡嗪类、含硫类等挥发性成分,也包括氨基酸、维生素、矿物质、多元醇以及活性肽等非挥发性成分。最后提出“健康化”将是中国白酒的发展方向。
The research progress in the chemical compositions in Baijin beneficial to people' s health, including volatile components such as phenols, acids, esters, terpenes, pyrazines, sulfur compounds etc., and non-volatile components such as amino acids, vitamins, minerals, polyols, and active peptides etc., was summed up in this paper. As a conclusion, healthy Baijiu is the development direction in Baijiu industry in China.
