以苦荞麦多糖为试验材料,以Vc和BHT为对照,评价其体外抗氧化活性。研究表明,苦荞麦多糖显示出一定的抗氧化活性,抗氧化活性随苦荞麦多糖浓度的增加而加强。苦荞麦多糖浓度达到2 mg·m L-1时,还原能力测得其700 nm处吸光度值为1.700,DPPH·清除率、ABTS自由基清除率、O2-清除率、·OH清除率最大,分别为57%,45%,80%,85%,IC50分别为1.706,2.263,0.010,0.327 mg·m L-1。苦荞麦多糖具有一定的抗氧化活性,可为其在食品及保健品领域的广泛应用提供一定的理论参考。
With bitter buckwheat polysaccharide as test materials, Vc and butylated hydroxytoluene for comparison, their antioxidant activity in vitro were evaluated. The results showed that polysaccharide of bitter buckwheat showed certain antioxidant activity, and antioxidant activity becoming strength with the increase of polysaccharide concentrations of bitter buckwheat. When the concentration of bitter buckwheat polysaccharide was 2 mg·m L-1, its reducing power measured by absorbance value was 1.7 at 700 nm, DPPH·clearance, ABTS radical clearance, clearance of O2-·OH clearance reached the highest, 57%, 45%, 80% and 85% respectively, IC50 were 1.706, 2.263, 0.010, 0.327 mg·m L-1. Bitter buckwheat polysaccharide has certain antioxidant activity, can be widely used in the field of food and health care products.
