该文以黑豆红色素为试验材料,采用分光光度法研究了不同的p H值、反应温度、反应时间、黑豆红色素浓度等条件对亚硝酸盐体外清除作用的影响,确定黑豆红色素体外清除亚硝酸盐的最佳条件。结果表明,黑豆红色素对亚硝酸盐具有较强的体外清除作用,在黑豆红色素浓度为5.5mg/mL、pH为2.6、反应温度为37℃、反应时间为4h时清除率最大,达到了99.50%,高于对照Vc。
Making Black beans red pigment as material,the influence of different pH,reaction temperature,reac-tion time,black beans red pigment concentration conditions on the nitrite scavenging effect in vitro by spectrophoto-metric method are studied,to ascertain the best condition of black beans red pigment removal of nitrite in vitro.
