以实验室筛选出的后酸化能力最弱的两株德氏乳杆菌保加利亚亚种为出发菌,详细研究了它们的生长能力、最适生长温度、耐酸和耐冷冻能力,并且分析了这些性质与后酸化之间的关系。结果表明:菌株的生长能力与后酸化之间存在紧密联系。其中,菌株的生长速度与后酸化成正比;对酸较敏感菌株的后酸化也较弱;42℃为两株菌的最适生长温度;冻干处理后,试验菌株的存活率高于对照菌。
Two weak postacidification LactobaciUus delbrueckii subsp, bulgaricus strains which were screened from KLDS-DICC were regarded as the research subjects. The physiological characteristics of these strains were studied, including the ability of growth, optimum growth tem- perature, acid and freeze-resistant capabilities, and the relationship between these properties and the post-acidification. Results demonstrated that there is a close link between the grow performance and postacidification. The strains which have lower growth speed and higher sensitivity to acid tolerance are weak postacidification. KLDSI.1006 and KLDSl.1011 had the best growth condition at 42 ~{2℃. After freeze-drying treatment, the survival rate of research strains was higher than the control strain.
