马铃薯是世界第三大粮食作物,是欧美等发达国家和部分发展中国家的主要食物来源。马铃薯营养和健康功能受其品种、加工方式、食物组成等诸多因素的影响,已成为研究热点。主要对马铃薯营养与健康功能的研究进展进行综述。
Potato is the third largest food crop in the world,and it is the main food source of developed countriesand some developing countries.Nutrition and health functions of potato are affected by many factors,such as potatovarieties,processing methods,food composition and so on.In this paper,the research progress of potato nutrition andhealth functions is reviewed.
