为了提高海参肠的利用率,利用海参自溶技术制备海参肠自溶水解物。分析了自溶水解物的分子质量分布范围和氨基酸组成,并通过体外化学模拟体系测定其1,1-二苯基-2-三硝基苯肼(DPPH·)清除能力、Fe^2+螯合能力和还原能力。结果表明,海参肠自溶水解物主要由分子质量小于3ku的组分组成,含有17种氨基酸,其具有一定的DPPH·清除能力、Fe^2+螯合能力和还原能力,其SC50、CC50和AC0.5分别为4.04、5.91和8.06mg/mL。
In order to increase the utilization of sea cucumber guts, the hydrolysates were prepared from sea cucumber guts by autolytic technology. The molecular weight distribution and amino acids composition of autolytic hydrolysates were analyzed. The antioxidant activities of autolytic hydrolysates were evaluated by using 1,1-diphenyl-2-picrylhydrazyl (DPPH.) assay, Fe^2+-chelating assay and reducing power assay. The results showed that the autolytic hydrolysates from sea cucumber guts were mainly composed of fractions below 3 ku with 17 kinds of amino acids. The autolytic hydrolysates possessed DPPH. radical scavenging capacity, Fe^2+-chelating ability and reducing power with SC50, CC50 and AC0.5 values of 4.04, 5.91 and 8.06 mg/mL, respectively.
