甜味剂是食品工业和医疗保健中不可或缺的重要原料,然而占据甜味剂市场居多的人工合成甜味剂可能对人体有致癌、致病的副作用,因而已被许多国家限制使用,而蔗糖的过多食用则导致越来越多的高血压、糖尿病、龋齿等疾病的发生。低能、无毒的天然甜味剂是人类理想的食品、药品添加剂。因此,很有必要了解并分析天然甜味剂的研究现状和应用情况。本文综合目前国内外已开发利用的天然甜味剂现状,分析了今后开发天然甜味剂应注意的一些问题,提出了一些野生甜味剂植物资源,为开发利用甜味植物资源提供参考。
Sweeteners are an important raw material in the food industry and health care.However, the artificial sweeteners are possibly pathogeuesis and carcinogenesis to humans which have been restricted to use in many countries.Excessive consumption of sucrose has caused a growing number of high blood pressure, diabetes, dental caries and other diseases. Low-calorie, non-toxic natural sweeteners are ideal food and medicine additives for human beings.Therefore,it is significant to understand and analyze the research status and application of natural sweeteners. This review summarizes the development of current status of natural sweeteners,analyzes some problems,and provides some wild sweet plants for the development and utilization in the future.
