研究了二-(2-乙基己基)琥珀酸酯磺酸钠(AOT)/异辛烷反胶束萃取大豆蛋白的动力学,考察了振荡速度、萃取温度、反胶束浓度和全脂大豆粉粒度对萃取速率的影响,初步表明反胶束萃取大豆蛋白的过程受内扩散控制,萃取过程可用未反应核模型来解释。在试验范围内,萃取过程符合一级反应,表观活化能为15.64 kJ/mol。建立宏观动力学方程1.22exp(-1 880.4/T)t=1+2(1-x)-3(1-x)2/3,并给予了试验验证,结果表明所得模型能较好地描述蛋白的萃取过程。试验结论对反胶束萃取大豆蛋白具有重要理论参考。
Bis-(2-ethylhexyl) sulfosuccinate(AOT)/isooctane reverse micelle solution system was adopted to extract soybean protein.Shrinking unreacted core model was applied to forming kinetic equation of the extraction.The effects of stirring intensity,extracting temperature,concentration of reverse micelle,particle size and extracting time were investigated.Results: The unreacted core model tallies with experimental data well.The extraction process is the first order reaction,and the apparent activation energy of the reaction calculated is 15.64 kJ/mol.It is established that the extraction process is diffusion through the ash layer and the kinetic process of extracting protein from soybean powder is conformable with 1.22exp(-1 880.4/T)t=1+2(1-x)-3(1-x)2/3.This work reveals the possibility of extracting protein from soybean powder by reverse micelles.
